Jiaozi: an age-old classic brought up to date

Beneath its appearance as a simple dumpling, jiaozi conceals a history stretching back almost 1,800 years.
How does it work? A soft, fluffy pastry stuffed with a finely seasoned mixture of meat, vegetables or both.

Born in the north-east of China, where he is nicknamed "Peking ravioliJiaozi is a dish for celebrating, sharing and tradition.

What makes it so special is the slightly mystical storytelling around its origins.
According to legend, jiaozi was invented by the doctor Zhang Zhongjing to warm hearts and cure frostbite.
Since then, it has symbolised sharing, good fortune and the warmth of large family gatherings.
Today, it is a fixture in major cities the world over - and especially in Paris, where Mian Fan has provided it with a showcase worthy of its heritage.

At the Dumpling Factory, jiaozi is king: homemade, prepared before your very eyes in an open kitchen, it arrives steaming hot at your table, ready to explode with flavour.
